MERLOT
The vines of Merlot are 15 years old, and are trained with a pruned-spur cordone system with a yield of about 60q. per hectare. Normally the defoliation and bunch thinning are done to obtain a higher concentration both of the aromas and of the perfumes. The harvest is done manually in order to care for and select the best grapes, followed by a gentle pressing and slow maceration at controlled temperatures. The wine obtained is aged slowly in stainless steel barrels for ten months in order to achieve a natural stabilisation before being bottled.
