FRIULANO
Tocai is an autochthonous grape with which a dry white wine, structured and fragrant, is produced. The vines have an age ranging from 11 to 15 years, and two raising systems are used: gujot and “double-arched cane”; these are systems that induce quality, a they reduce the production and they tend to obtain grapes that are more homogeneous in terms of maturation. In fact yield average is 60-70q. per hectare. Harvesting is carried out by hand, usually in the cooler hours of the day, then after the stripping follows a light maceration and an inoculated fermentation after that. The latter is carried out at a controlled temperature and therefore very slowly. The wine obtained then needs a long aging on the lees to achieve a correct organoleptic balance before bottling.
